Hello Jenn,
   
  Lori had a great suggestion. Another suggestion, if the school accepts it, is to use previous students work (from your previous professional portfolio -- if you school requires one) and write a reflection on what worked/and why, what could be inmproved, and how you could improve the lesson to affect student achievement--after learning new strategies from your summer class.

Jenn,

I implemented it in the fall and then shared my ideas and student work. It
was understood that I was taking the course in the summer and didn't have
access to kids. I just wrote this into my journal and it was accepted.
